Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups shredded coconut (sweetened)
  • 1 cup chocolate chips
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup chocolate chips (for melting and drizzling)

Instructions

  1. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract and mix until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in shredded coconut and chocolate chips.
  6. Refrigerate the dough for 30 minutes to 1 hour.
  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Flatten a scoop of dough in your palm, place a spoonful of caramel in the center, and wrap the dough around it to form a ball.
  9. Place the dough balls on the prepared baking sheet, spacing them apart.
  10. Bake for 12–15 minutes, until edges are golden brown.
  11. Let cookies cool on the baking sheet before transferring to a rack.
  12. Melt the additional chocolate chips and drizzle over cooled cookies.
  13. Allow the drizzle to set before serving.
