Description

Ingredients

  • 1 cup sliced fresh strawberries
  • 1 tablespoon cornstarch
  • 2 tablespoons sugar
  • 8 oz cream cheese, room temperature
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 sheets puff pastry, thawed
  • 1 large egg, lightly beaten with 1 tablespoon water
  • Optional: 1 tablespoon sugar for sprinkling
  • Optional: 2 tablespoons strawberry jam
  • For the glaze: 1/2 cup powdered sugar, 1/2 teaspoon vanilla extract, 1–2 tablespoons milk

Instructions

  1. Preheat oven to 400°F (204°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix sliced strawberries with sugar and cornstarch; let sit for 15 minutes.
  3. Beat cream cheese until smooth, then mix in powdered sugar and vanilla extract until creamy.
  4. Unfold puff pastry and cut into 12 rectangles; lightly score a border around each one.
  5. Spread 1 tablespoon of cream cheese mixture in the center of each rectangle, then top with strawberry mixture.
  6. Brush borders with egg wash and sprinkle with sugar if desired.
  7. Chill pastries in the fridge for 15–20 minutes if they’ve warmed up.
  8. Bake for 20–25 minutes until puffed and golden.
  9. Cool on tray for 5 minutes, then transfer to a wire rack.
  10. Finish with a brush of warm strawberry jam or a drizzle of glaze.
