Description

Strawberry Cake Mix Cookies are soft, chewy, and bursting with sweet strawberry flavor. Made with just four simple ingredients and ready in under 25 minutes, these pretty pink cookies are perfect for parties, holidays, or a quick dessert fix. Add white chocolate chips for extra creamy sweetness!

Ingredients

  • 1 box strawberry cake mix (15.25 oz)
  • 2 large eggs
  • ⅓ cup vegetable oil
  • ½ cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine cake mix, eggs, and vegetable oil. Mix until a thick dough forms.
  3. Fold in white chocolate chips if using.
  4. Scoop dough by rounded spoonfuls or use a cookie scoop, placing each on the prepared baking sheet about 2 inches apart.
  5. Bake for 10–12 minutes, until edges are set and tops are lightly crackled.
  6. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  1. Stir in sprinkles for a fun, festive touch.
  2. Add dried strawberries for extra fruity flavor and texture.
  3. Drizzle with glaze or top with cream cheese frosting after cooling for a frosted version.
  4. Store at room temperature for up to 5 days, or freeze for longer shelf life.
