Description
Classic Southern pecan pralines—rich, buttery, and sweet with a melt-in-your-mouth texture and crunchy pecans, perfect for gifting or indulging at home.
Ingredients
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 cup heavy cream
- 4 tbsp unsalted butter
- 1 tbsp light corn syrup (optional)
- 1/4 tsp sea salt or fine salt
- 1 tsp vanilla extract
- 2 cups coarsely chopped pecans
Instructions
- Line a baking sheet with parchment paper and set aside.
- Combine granulated sugar, brown sugar, heavy cream, butter, corn syrup (if using), and salt in a medium saucepan over medium heat, stirring until melted and blended.
- Attach a candy thermometer and bring the mixture to the “soft-ball” stage (234–240°F / 112–115°C), stirring occasionally.
- Remove from heat and stir in vanilla extract and pecans.
- Allow the mixture to cool slightly until thickened, then drop spoonfuls onto the prepared baking sheet.
- Let pralines set at room temperature until firm and chewy.
Notes
- Use corn syrup to reduce crystallization for smoother pralines.
- Keep the sides of the pan clean to avoid graininess.
- Walnuts or almonds can substitute pecans, but flavor will differ.
- Store in an airtight container at room temperature for up to 2 weeks.
