Ingredients
- 8 fresh peaches, peeled, pitted, and sliced
- 1/4 cup granulated sugar (for filling)
- 1/4 cup light brown sugar (for filling)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- 2 cups all-purpose flour
- 1/2 cup granulated sugar (for topping)
- 1/2 cup light brown sugar (for topping)
- 2 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter, chilled and cut into small pieces
- 1/2 cup boiling water
- 3 tablespoons granulated sugar (for sprinkling)
Instructions
- Preheat the oven to 400°F (dark/glass pan) or 425°F (light-colored pan).
- In a large bowl, mix peaches, 1/4 cup granulated sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
- Pour peach mixture into a 2-quart baking dish and bake for 10 minutes.
- In another bowl, combine flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, baking powder, and salt.
- Cut in butter until the mixture resembles coarse crumbs.
- Stir in boiling water just until combined.
- Remove peaches from oven and spoon topping over the fruit.
- Sprinkle with remaining 3 tablespoons of sugar.
- Place baking dish on a baking sheet and bake for 30 minutes or until topping is golden brown.
- Serve warm, optionally with ice cream.
