Description

Ingredients

  • 8 fresh peaches, peeled, pitted, and sliced
  • 1/4 cup granulated sugar (for filling)
  • 1/4 cup light brown sugar (for filling)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup light brown sugar (for topping)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/2 cup boiling water
  • 3 tablespoons granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F (dark/glass pan) or 425°F (light-colored pan).
  2. In a large bowl, mix peaches, 1/4 cup granulated sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  3. Pour peach mixture into a 2-quart baking dish and bake for 10 minutes.
  4. In another bowl, combine flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, baking powder, and salt.
  5. Cut in butter until the mixture resembles coarse crumbs.
  6. Stir in boiling water just until combined.
  7. Remove peaches from oven and spoon topping over the fruit.
  8. Sprinkle with remaining 3 tablespoons of sugar.
  9. Place baking dish on a baking sheet and bake for 30 minutes or until topping is golden brown.
  10. Serve warm, optionally with ice cream.
