Description

This Southern Peach Cobbler is a comforting, classic dessert made with juicy peaches and a golden, buttery topping. Perfect for summer gatherings or weeknight treats.


Ingredients

  • 8 fresh peaches, peeled, pitted, and sliced into thin wedges
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/2 cup boiling water
  • 3 tablespoons granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F (if using a dark or glass pan) or 425°F (if using a light-colored pan).
  2. In a large bowl, combine sliced peaches, 1/4 cup granulated sugar, 1/4 cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly.
  3. Pour the peach mixture into a 2-quart baking dish and bake for 10 minutes.
  4. In a large bowl, mix flour, 1/2 cup granulated sugar, 1/2 cup light brown sugar, baking powder, and salt.
  5. Blend in the chilled butter until the mixture resembles coarse meal. Stir in boiling water until just combined.
  6. Remove peaches from the oven and drop spoonfuls of topping over them.
  7. Sprinkle with remaining 3 tablespoons of granulated sugar.
  8. Place the dish on a baking sheet and bake until the topping is golden, about 30 minutes.
  9. Serve warm, optionally with vanilla ice cream.

Notes

  • Use canned or frozen peaches if fresh are unavailable, just drain well.
  • Adjust spices to taste or add ginger/cardamom for variation.
  • Store covered in the fridge for up to 4 days.
  • Reheat individual portions in microwave or whole dish in oven at 350°F for 20 minutes.
