Description
This Southern Peach Cobbler is a comforting, classic dessert made with juicy peaches and a golden, buttery topping. Perfect for summer gatherings or weeknight treats.
Ingredients
- 8 fresh peaches, peeled, pitted, and sliced into thin wedges
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter, chilled and cut into small pieces
- 1/2 cup boiling water
- 3 tablespoons granulated sugar (for sprinkling)
Instructions
- Preheat the oven to 400°F (if using a dark or glass pan) or 425°F (if using a light-colored pan).
- In a large bowl, combine sliced peaches, 1/4 cup granulated sugar, 1/4 cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly.
- Pour the peach mixture into a 2-quart baking dish and bake for 10 minutes.
- In a large bowl, mix flour, 1/2 cup granulated sugar, 1/2 cup light brown sugar, baking powder, and salt.
- Blend in the chilled butter until the mixture resembles coarse meal. Stir in boiling water until just combined.
- Remove peaches from the oven and drop spoonfuls of topping over them.
- Sprinkle with remaining 3 tablespoons of granulated sugar.
- Place the dish on a baking sheet and bake until the topping is golden, about 30 minutes.
- Serve warm, optionally with vanilla ice cream.
Notes
- Use canned or frozen peaches if fresh are unavailable, just drain well.
- Adjust spices to taste or add ginger/cardamom for variation.
- Store covered in the fridge for up to 4 days.
- Reheat individual portions in microwave or whole dish in oven at 350°F for 20 minutes.
- Make gluten-free by using a GF flour blend with xanthan gum.
