Description
This warm and buttery banana cobbler is a Southern-style dessert made with ripe bananas, a soft vanilla-scented batter, and a caramelized sugar topping. Like banana pudding meets cobbler, it’s gooey, golden, and perfect served warm with a scoop of ice cream for the ultimate comfort treat.
Ingredients
- 4–5 ripe bananas, sliced
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1 tbsp brown sugar (plus extra for topping)
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup whole milk
- 1 tsp vanilla extract
- ½ tsp ground cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C). Pour melted butter into a 9×13-inch baking dish.
- In a mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- Stir in milk and vanilla until just combined.
- Pour the batter over the melted butter in the pan—do not stir.
- Gently layer sliced bananas evenly over the batter.
- Sprinkle the top with additional brown sugar and cinnamon if using.
- Bake for 40–45 minutes, until the top is golden and bubbling.
- Let cool slightly and serve warm—best with vanilla ice cream or whipped cream.
Notes
- Use firm-ripe bananas for best texture.
- Add a pinch of nutmeg or splash of bourbon for depth.
- Chopped pecans or a cream cheese swirl can elevate the cobbler.
- Reduce brown sugar topping for a less-sweet version.
