Description

This warm and buttery banana cobbler is a Southern-style dessert made with ripe bananas, a soft vanilla-scented batter, and a caramelized sugar topping. Like banana pudding meets cobbler, it’s gooey, golden, and perfect served warm with a scoop of ice cream for the ultimate comfort treat.

Ingredients

  • 45 ripe bananas, sliced
  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tbsp brown sugar (plus extra for topping)
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Pour melted butter into a 9×13-inch baking dish.
  2. In a mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Stir in milk and vanilla until just combined.
  4. Pour the batter over the melted butter in the pan—do not stir.
  5. Gently layer sliced bananas evenly over the batter.
  6. Sprinkle the top with additional brown sugar and cinnamon if using.
  7. Bake for 40–45 minutes, until the top is golden and bubbling.
  8. Let cool slightly and serve warm—best with vanilla ice cream or whipped cream.

Notes

  • Use firm-ripe bananas for best texture.
  • Add a pinch of nutmeg or splash of bourbon for depth.
  • Chopped pecans or a cream cheese swirl can elevate the cobbler.
  • Reduce brown sugar topping for a less-sweet version.
