Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 6 cups chicken broth
- 1 medium onion, diced
- 2 celery stalks, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lb potato gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream or half-and-half
- 1 tbsp olive oil or butter (optional, for sautéing vegetables)
Instructions
- Place the chicken, onion, celery, carrots, garlic, thyme, salt, and pepper into the slow cooker. Pour in the chicken broth to cover.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken directly in the slow cooker using two forks.
- Stir in the gnocchi and cook on high for another 30 minutes, or until the gnocchi is soft.
- Add the spinach and heavy cream, stir until spinach wilts and soup is heated through.
- Taste and adjust seasoning with salt and pepper as needed. Serve warm.
