Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lb potato gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream or half-and-half
  • 1 tbsp olive oil or butter (optional, for sautéing vegetables)

Instructions

  1. Place the chicken, onion, celery, carrots, garlic, thyme, salt, and pepper into the slow cooker. Pour in the chicken broth to cover.
  2. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  3. Shred the chicken directly in the slow cooker using two forks.
  4. Stir in the gnocchi and cook on high for another 30 minutes, or until the gnocchi is soft.
  5. Add the spinach and heavy cream, stir until spinach wilts and soup is heated through.
