Ingredients
Sweet Potatoes
- 3 large sweet potatoes
Seasonings & Toppings
- 3 tablespoons olive oil
- ½ teaspoon cinnamon
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon red pepper flakes
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon regular or hot honey (spicy is delicious!)
- ⅓ cup crumbled feta cheese
- Fresh chives or parsley, chopped
- Additional honey, for serving
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the sweet potato rounds to a crispy, golden finish.
- Prepare the sweet potatoes: Wash the sweet potatoes thoroughly and pat them dry. Slice into ⅓-inch thick rounds to ensure even cooking.
- Coat the potatoes with oil: Drizzle olive oil onto a large rimmed sheet tray. Add the sweet potato slices and turn them gently to coat evenly with the oil. Use two sheet trays if needed, and arrange the slices so they don’t touch to allow proper roasting.
- Season the sweet potatoes: Sprinkle the cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper evenly over the potato rounds. Drizzle the tablespoon of honey on top and turn the slices again to evenly distribute the spices and honey.
- Roast the potatoes: Bake in the preheated oven for 20 minutes. Then flip each sweet potato round and roast for an additional 20-25 minutes, or until the edges are crisp and the potatoes are golden brown.
- Transfer and season: Carefully move the roasted sweet potato rounds to a serving platter. Season with a little more salt to taste.
- Add honey and feta: Drizzle additional honey over the warm potato rounds, then crumble the feta cheese evenly on top. Garnish with freshly chopped chives or parsley for a fresh pop of color and flavor.
- Serve warm: These sweet potato rounds are best served warm as a flavorful side dish or appetizer that balances sweet, savory, and spicy notes beautifully.
Notes
- Use two sheet trays if needed to avoid overcrowding, which helps the potatoes roast evenly and become crispy.
- If you prefer less spice, reduce or omit the red pepper flakes.
- For a vegan version, omit the feta and use a vegan-friendly honey substitute or maple syrup.
- Leftovers can be refrigerated and reheated in the oven to maintain crispiness.
- Experiment with different herbs like thyme or rosemary for added flavor variation.
