These Roasted Garlic Butter Parmesan Potatoes are the ultimate crispy, garlicky side dish—easy to prepare and bursting with buttery, cheesy flavor. Perfectly golden on the outside and fluffy on the inside, they pair beautifully with chicken, steak, or salads.
Ingredients
- 3 pounds baby red potatoes, washed and quartered
- 1/4 cup olive oil
- 6 large cloves of garlic, finely chopped or minced
- Salt and freshly cracked black pepper, to taste
- 1 tablespoon Italian seasoning
- 3/4 cup freshly grated Parmesan cheese
- 1/2 cup unsalted butter
- Fresh chopped parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Boil water and parboil potatoes for 5–8 minutes. Drain and set aside.
- Mix olive oil, garlic, salt, pepper, Italian seasoning, and Parmesan in a large bowl.
- Toss potatoes in the mixture until well coated.
- Arrange potatoes cut side down on a greased baking sheet.
- Roast for 25 minutes, flipping after 15 minutes.
- Melt butter and stir in parsley while potatoes roast.
- Drizzle roasted potatoes with butter-parsley mixture.
- Serve immediately.

- For a vegan option, use dairy-free butter and vegan Parmesan.
