Description

Ingredients

  • For the scones:
  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Unsalted butter (cold, cubed)
  • Fresh raspberries
  • Lemon zest
  • Heavy cream
  • Egg
  • Vanilla extract
  • For the glaze:
  • Powdered sugar
  • Fresh lemon juice
  • Lemon zest (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in cold butter until mixture forms coarse crumbs.
  4. Gently fold in raspberries.
  5. In a small bowl, whisk together cream, egg, and vanilla.
  6. Add wet ingredients to dry, stir until just combined.
  7. Turn dough out onto a floured surface, gently shape into a 1-inch thick circle.
  8. Cut into 8 wedges, place on baking sheet.
  9. Brush tops with cream, bake for 18–22 minutes until golden.
  10. While slightly warm, drizzle with lemon glaze made from powdered sugar and lemon juice.
