Quick and easy ground beef enchiladas baked with cheesy sauce
Ingredients
- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1/2 cup chopped onion
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 °F (175 °C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add chopped onion, garlic powder, cumin, salt, and pepper to the beef and cook until the onion is soft.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them up.
- Place the rolled tortillas seam‑side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20–25 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, add diced green chilies to the beef mixture.
- Serve with sour cream and guacamole on the side.
- Can be made ahead and frozen before baking.
