Description

Pepper Steak in a Crock Pot is a hearty, flavorful dish made with tender strips of beef, colorful bell peppers, and a savory sauce slow-cooked to perfection.


Ingredients

  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional, for browning)

Instructions

  1. Brown the beef strips in olive oil in a skillet, if desired, to add flavor.
  2. Place the beef, sliced onions, and bell peppers into the crock pot.
  3. In a small bowl, mix soy sauce, beef broth, brown sugar, garlic, and ground ginger.
  4. Pour the sauce mixture over the beef and vegetables in the crock pot.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until beef is tender.
  6. Mix cornstarch with water and stir into the crock pot about 30 minutes before serving to thicken the sauce.
