Ingredients
- 1.5 lbs beef sirloin or flank steak, thinly sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 cup beef broth
- 2 tablespoons brown sugar
- 1/2 teaspoon ground ginger
- 2 tablespoons cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- 1 tablespoon olive oil (optional, for browning)
Instructions
- Brown the beef strips in olive oil in a skillet, if desired, to add flavor.
- Place the beef, sliced onions, and bell peppers into the crock pot.
- In a small bowl, mix soy sauce, beef broth, brown sugar, garlic, and ground ginger.
- Pour the sauce mixture over the beef and vegetables in the crock pot.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until beef is tender.
- Mix cornstarch with water and stir into the crock pot about 30 minutes before serving to thicken the sauce.
- Cook uncovered for the remaining time, then serve hot over rice or noodles.
