Description

Peanut Marshmallow Clusters are a delightful no-bake treat combining melted chocolate, crunchy dry roasted peanuts, and fluffy miniature marshmallows. These sweet and nutty clusters require minimal prep and come together quickly, making them perfect for parties, holidays, or an easy homemade candy snack.

Ingredients

Chocolate Mixture

  • 2 cups semi-sweet chocolate chips
  • 2 cups milk chocolate chips
  • 3 tablespoons vegetable oil

Mix-ins

  • 2 cups miniature marshmallows
  • 1½ cups dry roasted cocktail peanuts

Instructions

  1. Prepare Baking Sheets: Line 2 baking sheets with wax paper and set them aside. This will prevent the candy clusters from sticking and allow them to set properly.
  2. Melt the Chocolate: Combine the semi-sweet and milk chocolate chips with the vegetable oil in a large heat-safe mixing bowl. Microwave the mixture in 30-second intervals, stirring thoroughly after each, until the chocolate is completely melted and smooth.
  3. Mix in Marshmallows and Peanuts: Allow the melted chocolate to cool to lukewarm temperature to avoid melting the marshmallows. Then, stir in the miniature marshmallows and dry roasted peanuts until they are fully coated with the chocolate mixture.
  4. Form Clusters: Using a 1½ tablespoon cookie scoop, drop clusters of the chocolate mixture onto the prepared baking sheets, spacing them about 2 inches apart to prevent sticking.
  5. Chill to Set: Place the baking sheets in the refrigerator and chill until the clusters are completely set and firm, approximately 20–30 minutes. Once set, they are ready to serve and enjoy.

Notes

  • You can substitute vegetable oil with coconut oil for a slight flavor variation.
  • For added texture, try incorporating chopped dried fruits like cranberries or raisins.
  • Store clusters in an airtight container in the refrigerator for up to one week.
  • Ensure the chocolate is cooled before mixing in marshmallows to avoid melting them and losing their texture.
