Ingredients

  • Unsalted butter
  • Creamy peanut butter (no-stir variety preferred, like Jif or Skippy)
  • Vanilla extract
  • Powdered sugar

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a microwave-safe bowl, combine butter and peanut butter. Microwave on high for 2 minutes, stir, then continue in 1-minute intervals (stirring each time) until completely melted and smooth.
  3. Stir in vanilla extract. Gradually add powdered sugar, mixing until thick and well blended.
  4. Pour mixture into the prepared pan and smooth the top with a spatula.
  5. Refrigerate for at least 2 hours or until firm.
  6. Lift out using parchment and cut into squares.

Notes

  • Use crunchy peanut butter or add chopped nuts for texture.
  • Swirl in melted chocolate before chilling for a peanut butter chocolate combo.
  • Top with flaky sea salt for a sweet-salty finish.
  • Natural peanut butter is not recommended, as it may affect texture.
  • For dairy-free, use plant-based butter.
