Banana Cinnamon Roll Dough

  • 1 medium banana, thinly sliced into about 30 slices

Glaze

  • 3 tablespoons peanut butter
  • 1 cup confectioners sugar
  • 3-4 tablespoons non-dairy milk of choice
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare the banana cinnamon roll dough: Begin by making the dough as directed through Step 3 of your dough preparation process, allowing it to rise until doubled in size.
  2. Roll out and assemble: Grease a 9×13-inch baking dish with butter or coconut oil and set aside. Lightly flour your rolling surface and pin, then carefully roll the dough into a 15×9-inch rectangle. Spread softened butter followed by creamy peanut butter evenly over the dough. Sprinkle brown sugar and ground cinnamon on top and gently pat to absorb.
  3. Add banana slices and roll: Arrange thin banana slices in three long rows across the dough. Using your hands and thumbs, gently roll the dough tightly into a long log, seam side down.
  4. Cut into rolls: Trim no more than 1 inch from the ends and use dental floss or a serrated knife to slice the log into 12 rolls, approximately 1½ inches wide. Place rolls in the prepared greased pan, spacing them apart to allow expansion. Let the rolls rise again for about 15 minutes in a draft-free area.
