Peach Fluff Salad is a no-bake, creamy dessert made with peaches, whipped topping, marshmallows, and cottage cheese. It’s light, refreshing, and perfect for summer gatherings or potlucks.
Ingredients
- 1 can (15 oz) sliced peaches, drained and chopped
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 container (8 oz) whipped topping (Cool Whip or similar), thawed
- 1 cup mini marshmallows
- 1 cup cottage cheese
- ½ cup chopped pecans (optional)
- ½ teaspoon vanilla extract
Instructions
- Drain the canned peaches and chop them into bite-sized pieces. Set aside.
- In a large mixing bowl, combine the instant vanilla pudding mix with the thawed whipped topping. Stir until smooth.
- Gently fold in the cottage cheese until evenly distributed.
- Add the chopped peaches, mini marshmallows, and optional chopped pecans. Fold gently to combine.
- Stir in the vanilla extract.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.
Notes
- Substitute canned peaches with fresh, ripe peaches when in season.
- Try pineapple chunks or other fruits for a tropical twist.
- Enhance texture with shredded coconut or white chocolate chips.
- Garnish with additional chopped pecans or mint before serving.
