Description

One-Skillet Beef Stroganoff Tortellini is a creamy, cheesy twist on the classic dish, made with ground beef, mushrooms, and tender cheese tortellini all cooked in one pan. It’s the perfect easy comfort food for busy weeknights, ready in under 30 minutes with minimal cleanup!


Ingredients

  • Ground beef
  • Olive oil
  • Yellow onion, chopped
  • Garlic, minced
  • Mushrooms, sliced
  • All-purpose flour
  • Beef broth
  • Worcestershire sauce
  • Dijon mustard
  • Dried thyme
  • Salt
  • Black pepper
  • Refrigerated cheese tortellini
  • Sour cream
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese (optional, for topping)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Remove from pan and drain excess grease.
  2. In the same skillet, sauté onions until soft. Add garlic and mushrooms; cook until mushrooms are browned.
  3. Sprinkle flour over the mixture and stir for 1 minute. Gradually whisk in beef broth.
  4. Add Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Bring to a gentle simmer.
  5. Stir in tortellini and cook according to package instructions (about 4–5 minutes).
  6. Return beef to the skillet and remove from heat. Stir in sour cream until smooth and creamy.
  7. Garnish with chopped parsley and Parmesan cheese if desired. Serve warm.

  • Substitute ground turkey or plant-based meat for a different protein.
  • Leave out mushrooms or replace with zucchini if preferred.
  • Add spinach or peas at the end for extra vegetables.
  • Reheat gently with a splash of broth or water to keep the sauce creamy.
