Description

A comforting, easy one-pan meal combining tender chicken and buttery noodles in one savory dish.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb / 450 g)
  • 8 oz (225 g) egg noodles
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 ml) milk
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • Optional garnish: chopped fresh parsley

Instructions

  1. Season the chicken breasts on both sides with a pinch of salt and pepper.
  2. In a large skillet over medium heat, melt 1 tablespoon of the butter.
  3. Add the chicken to the skillet and cook for about 5–6 minutes per side, until golden and cooked through. Remove and set aside.
  4. Reduce heat to medium-low, then add the remaining tablespoon of butter to the same skillet.
  5. Add the chopped onion and cook until softened, about 3–4 minutes.
  6. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  7. Add the egg noodles, chicken broth, and milk, then season with salt and pepper.
  8. Increase the heat to medium-high and bring the mixture to a gentle boil. Stir frequently to prevent sticking.
  9. Once boiling, reduce heat to medium-low, cover, and simmer for about 8–10 minutes, or until the noodles are tender and most of the liquid is absorbed.
  10. Slice or chop the cooked chicken and return it to the pan, stirring to combine and heat through.
  11. Garnish with parsley if desired, then serve warm directly from the pan.

Notes

  • Swap egg noodles for any pasta shape like fettuccine or wide noodles if preferred.
  • Mix in vegetables such as peas, spinach, or mushrooms during cooking for extra nutrition.
  • For richer flavor, substitute half the chicken broth with white wine.
  • Adjust milk to broth ratio for creamier or lighter sauce.
