Ingredients
- 2 boneless, skinless chicken breasts

- 1 1/2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 teaspoon smoked paprika (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Cook for 6-7 minutes per side until golden and cooked through. Remove the chicken and set aside.
- In the same skillet, add rice and toast for 1-2 minutes, stirring frequently.
- Mix BBQ sauce and honey in a separate bowl. Add it to the skillet with the rice.
- Pour in the chicken broth and stir. Place chicken breasts back on top of the rice. Cover and reduce the heat to low. Simmer for 20-25 minutes until rice is tender.
- Let it sit, covered, for 5 minutes before serving. Slice the chicken and serve it over rice, garnished with fresh parsley.
