Description

These Oatmeal Raisin Cookie Bars are thick, chewy, and blend the comforting flavors of classic oatmeal raisin cookies into a simple, shareable bar format—perfect for snacking, lunchboxes, or dessert.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon freshly ground nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup melted and cooled butter
  • 2 cups quick-cooking oats (not instant)
  • 1½ cups raisins

Instructions

  1. Preheat oven to 350 °F. Line an 8×8‑inch pan with parchment paper.
  2. In a large bowl, whisk together flour, sugars, baking soda, salt, cinnamon, and nutmeg.
  3. Make a well in the center and stir in vanilla, egg, and melted butter until smooth.
  4. Fold in oats and raisins evenly.
  5. Spread the dough into the pan, pressing it into an even layer.
  6. Bake for 22–26 minutes, until bars are set and edges are golden. Don’t overbake.
  7. Cool completely in the pan on a wire rack before lifting out and slicing into bars.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Can be refrigerated for up to a week or frozen for up to 3 months.
  • To warm, microwave for 10–15 seconds.
  • Optional add-ins: nuts, dried fruit, chocolate chips.
  • Use gluten-free flour for a GF version.
