Description

This Oat, Apple, and Carrot Cake is a moist, wholesome dessert combining chewy oats, sweet apples, and carrots with warm spices, perfect for breakfast, snacking, or dessert.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour or whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup brown sugar or maple syrup
  • 1/3 cup vegetable oil or melted coconut oil
  • 1 cup grated apple (about 1 medium apple)
  • 1 cup grated carrot (about 2 medium carrots)
  • 1 tsp vanilla extract
  • Optional: 1/2 cup raisins, chopped nuts, or shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a cake pan with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with sugar or syrup, oil, and vanilla extract until smooth.
  4. Stir grated apple and carrot into the wet mixture.
  5. Combine wet and dry mixtures, folding gently until just mixed. Fold in optional ingredients if using.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • For a vegan version, replace eggs with flax eggs.
