Ingredients
- Granulated sugar
- Light corn syrup
- Water
- Salt
- Egg whites (room temperature)
- Flavored Jello gelatin powder (any flavor: strawberry, lime, cherry, etc.)
- Clear vanilla extract
- Optional: chopped pecans or walnuts
Instructions
- Line baking sheets with parchment or wax paper and butter two spoons.
- In a saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
- Bring to a boil and cook without stirring until the syrup reaches 250°F (hard-ball stage).
- While syrup cooks, beat egg whites in a stand mixer until stiff peaks form.
- Reduce mixer speed and slowly beat in Jello powder.
- Carefully pour hot syrup into the egg white mixture in a thin stream while mixing on medium-high.
- Add vanilla and continue beating until candy loses gloss and holds shape (4–6 minutes).
- Fold in chopped nuts if using.
- Drop spoonfuls onto prepared baking sheets using buttered spoons.
- Let candies sit at room temperature for several hours or overnight to fully set.
Notes
- Use a candy thermometer for best results—accurate syrup temp is key.
- Different Jello flavors create fun color and flavor combinations.
- Don’t attempt on humid days; candy may not set properly.
- Skip the nuts for a smooth version or decorate with sprinkles for festive flair.
