Description

This Garlic Parmesan Chicken Meatloaf is a tender, cheesy, and flavorful twist on a classic comfort food, made with lean ground chicken, Parmesan, and a buttery garlic glaze.


Ingredients

  • 1 lb ground chicken
  • ½ cup breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese
  • 1 large egg, beaten
  • ¼ cup milk
  • 2 Tbsp fresh parsley, chopped
  • 2 tsp garlic powder (or 3 cloves fresh garlic, minced)
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 Tbsp melted butter
  • 2 Tbsp grated Parmesan cheese
  • 1 tsp garlic powder (or 1 clove fresh garlic, minced)
  • 1 Tbsp chopped parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, milk, parsley, garlic powder, onion powder, salt, and pepper until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan, smoothing the top.
  4. Bake for about 40 minutes, or until the internal temperature reaches 165°F (74°C).
  5. While baking, whisk together the glaze ingredients: melted butter, Parmesan, garlic powder, and parsley.
  6. After 40 minutes, brush the glaze over the meatloaf and return to the oven for 5–10 more minutes until golden and fragrant.
  7. Let the meatloaf rest for 5–10 minutes before slicing.

  • Use a thermometer to ensure doneness—165°F is ideal.
