Ingredients

  • For the Chicken and Zucchini Bake:
  • 2 boneless, skinless chicken breasts
  • 3 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    Season the chicken breasts with olive oil, oregano, garlic powder, onion powder, salt, and pepper. Set aside.
  3. Prepare the Vegetables:
    Slice the zucchinis and halve the cherry tomatoes. Toss them with a pinch of salt, pepper, and a drizzle of olive oil.
  4. Assemble the Dish:
    In a baking dish, arrange the seasoned chicken breasts. Surround the chicken with the zucchini slices, cherry tomatoes, and Kalamata olives.
  5. Bake:
    Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the zucchini is tender.
  6. Add Feta Cheese:
    In the last 5 minutes of baking, sprinkle crumbled feta cheese over the top of the chicken and vegetables. Bake for an additional 5 minutes until the cheese is melted and bubbly.
