Description

Marry Me Chicken Soup is a creamy, comforting twist on the classic Marry Me Chicken dish, featuring tender chicken, sun-dried tomatoes, Parmesan, and fresh spinach in a rich, flavorful broth.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (oil-packed), chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions and cook until softened, about 5 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the chopped sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes. Cook for 2–3 minutes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Add the chicken and simmer until fully cooked, about 15–20 minutes.
  6. Remove the chicken, shred it, and return it to the soup.
  7. Reduce heat, stir in heavy cream and grated Parmesan, and let it melt into the soup.
  8. Add fresh spinach and stir until wilted.
  9. Season with salt and black pepper to taste. Serve hot.
