Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (oil-packed), chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onions and cook until softened, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the chopped sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes. Cook for 2–3 minutes.
- Pour in the chicken broth and bring to a gentle boil.
- Add the chicken and simmer until fully cooked, about 15–20 minutes.
- Remove the chicken, shred it, and return it to the soup.
- Reduce heat, stir in heavy cream and grated Parmesan, and let it melt into the soup.
- Add fresh spinach and stir until wilted.
- Season with salt and black pepper to taste. Serve hot.

- Use chicken thighs for a richer flavor.
- Can substitute coconut milk for a dairy-free option.
