Mac and Cheese Meatloaf Casserole brings together the hearty goodness of a classic meatloaf with the creamy comfort of cheesy macaroni in one delicious dish. Perfect for family dinners or gatherings, this easy-to-make casserole satisfies all your comfort food cravings with its rich flavors and golden-baked topping.

Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 8 oz elbow macaroni
  • 2 tablespoons butter
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix ground beef, bread crumbs, egg, onion, garlic, salt, pepper, ketchup, and mustard.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish.
  4. Bake for 25-30 minutes until mostly cooked through.
  5. Meanwhile, cook the macaroni according to package directions, then drain.
  6. In a saucepan, melt butter over medium heat. Stir in milk and add shredded cheddar cheese until melted and smooth.
  7. Toss cooked macaroni with the cheese sauce.
  8. Spread the macaroni and cheese evenly over the baked meatloaf layer.
  9. Sprinkle Parmesan cheese on top.
  10. Bake an additional 10-15 minutes, until the top is bubbly and lightly browned.
  11. Cool slightly before serving.

Notes

  • For extra flavor swap cheddar with a cheese blend like mozzarella and gouda.
  • Stir hot sauce into the cheese sauce for a spicy version.
  • Add cooked peas or broccoli to the macaroni for a veggie boost.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F or microwave individual portions.
  • This dish can be frozen after baking; thaw overnight in the refrigerator before reheating.
