Description
Lemon rolls are a delightful twist on the classic cinnamon roll, featuring a soft dough and a tangy lemon glaze that offers the perfect balance of sweetness and citrus. They’re ideal for breakfast, brunch, or dessert.
Ingredients
- 1 package active dry yeast
- 1 cup warm milk
- 1/2 cup sugar
- 1/3 cup butter, melted
- 1/2 teaspoon salt
- 2 eggs
- 4 cups all-purpose flour (divided)
- 1/2 cup lemon juice
- 2 tablespoons lemon zest
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- In a bowl, mix the yeast with warm milk and sugar. Let it sit for 5–10 minutes until it becomes frothy.
- Add melted butter, eggs, and salt to the yeast mixture. Stir in 3 cups of flour, one cup at a time, until the dough forms.
- Turn the dough onto a floured surface and knead for about 5–7 minutes, adding the remaining flour until it’s smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise for about 1 hour, or until it doubles in size.
- Preheat your oven to 350°F (175°C). Punch the dough down and roll it out into a rectangle (about 1/2 inch thick).
- Mix together the lemon juice, zest, and sugar, then spread the mixture evenly over the dough.
- Roll the dough tightly and slice it into 12 rolls.
- Arrange the rolls in a greased baking pan and let them rise for 30–45 minutes.
- Bake in the preheated oven for 25–30 minutes or until golden brown.
- While the rolls are baking, prepare the glaze by whisking together powdered sugar, lemon juice, and vanilla extract.
- Once the rolls are done, drizzle the glaze over them while they’re still warm. Serve and enjoy!
Notes
- For a richer twist, try using a cream cheese glaze instead of the lemon glaze.
- To make these rolls vegan, substitute non-dairy milk, dairy-free butter, and flax eggs.
- These rolls can be frozen after baking. Wrap them tightly and store for up to 3 months.
