Description

Lemon rolls are a delightful twist on the classic cinnamon roll, featuring a soft dough and a tangy lemon glaze that offers the perfect balance of sweetness and citrus. They’re ideal for breakfast, brunch, or dessert.


Ingredients

  • 1 package active dry yeast
  • 1 cup warm milk
  • 1/2 cup sugar
  • 1/3 cup butter, melted
  • 1/2 teaspoon salt
  • 2 eggs
  • 4 cups all-purpose flour (divided)
  • 1/2 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the yeast with warm milk and sugar. Let it sit for 5–10 minutes until it becomes frothy.
  2. Add melted butter, eggs, and salt to the yeast mixture. Stir in 3 cups of flour, one cup at a time, until the dough forms.
  3. Turn the dough onto a floured surface and knead for about 5–7 minutes, adding the remaining flour until it’s smooth and elastic.
  4. Place the dough in a greased bowl, cover with a towel, and let it rise for about 1 hour, or until it doubles in size.
  5. Preheat your oven to 350°F (175°C). Punch the dough down and roll it out into a rectangle (about 1/2 inch thick).
  6. Mix together the lemon juice, zest, and sugar, then spread the mixture evenly over the dough.
  7. Roll the dough tightly and slice it into 12 rolls.
  8. Arrange the rolls in a greased baking pan and let them rise for 30–45 minutes.
  9. Bake in the preheated oven for 25–30 minutes or until golden brown.
  10. While the rolls are baking, prepare the glaze by whisking together powdered sugar, lemon juice, and vanilla extract.
  11. Once the rolls are done, drizzle the glaze over them while they’re still warm. Serve and enjoy!

Notes

  • For a richer twist, try using a cream cheese glaze instead of the lemon glaze.
  • To make these rolls vegan, substitute non-dairy milk, dairy-free butter, and flax eggs.
