Description

These lemon brownies are a delightful twist on the classic chocolate version. They offer a soft, fudgy texture bursting with bright citrus flavor and are topped with a tangy lemon glaze. Made with a convenient cake mix base, they’re quick to prepare and perfect for any occasion.


Ingredients

  • 15.25 ounces yellow cake mix
  • 3.4 ounces lemon instant pudding mix
  • 1/3 cup fresh lemon juice
  • 3 large eggs
  • 1 teaspoon lemon zest
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice (more if needed for desired consistency)
  • Lemon zest, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper and lightly grease it.
  2. In a medium mixing bowl, combine the dry cake mix, lemon pudding mix, lemon juice, eggs, and lemon zest. Mix until well blended.
  3. Pour the batter into the prepared pan and spread it evenly.
  4. Bake for 22–24 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  5. Allow the brownies to cool in the pan for 10 minutes. Then, using the parchment paper, lift them out and let them cool completely on a wire rack.
  6. While the brownies are cooling, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Adjust the consistency with more lemon juice if necessary.
  7. Once the brownies are completely cool, drizzle the glaze over the top and sprinkle with additional lemon zest if desired.
  8. Cut into squares and serve.

Notes

  • For a different citrus flavor, substitute lime or orange juice and zest for lemon.
  • Add white chocolate chips or fresh berries into the batter for added texture and flavor.
  • For a creamier glaze, mix in a tablespoon of softened cream cheese.
