Description
Lazy Man’s Pie Peach Cobbler is a simple and delicious dessert made with pantry staples, featuring juicy peaches and a buttery, cake-like crust. Perfect for easy, comforting treats.
Ingredients
- ½ cup (1 stick) unsalted butter or margarine
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 cup milk
- 1 teaspoon baking powder
- Dash of salt
- 1 quart sweetened fruit (such as peaches, cherries, or blackberries)
Instructions
- Preheat the oven to 350°F (175°C).
- Place the butter in a 9×13-inch baking dish and let it melt in the oven.
- In a mixing bowl, combine the flour, sugar, baking powder, salt, and milk, stirring until the batter is smooth.
- Once the butter has melted, pour the batter over it in the baking dish without stirring.
- Spoon the sweetened fruit evenly over the batter, resisting the urge to stir. The batter will rise around the fruit as it bakes.
- Bake for about 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cobbler cool slightly before serving. It can be served on its own or topped with vanilla ice cream.
Notes
- For different flavor profiles, mix peaches with other fruits like cherries or blackberries.
- Adding a pinch of cinnamon or nutmeg to the batter gives the cobbler a warm, spiced note.
- Use vanilla or almond extract to enhance the flavor.
- For a gluten-free version, substitute the all-purpose flour with a gluten-free blend.
