Ingredients

  • Thinly sliced beef (ribeye or sirloin)
  • Bell peppers (green, red, or both), sliced
  • Onion, thinly sliced
  • Garlic, minced
  • Provolone or mozzarella cheese slices (used as wraps)
  • Olive oil or avocado oil
  • Salt
  • Pepper
  • Optional: Cream cheese or shredded cheddar

Instructions

  1. Cook the Vegetables: Sauté sliced onions and bell peppers in oil over medium-high heat until tender. Set aside.
  2. Cook the Beef: In the same pan, cook beef slices until browned. Season with salt, pepper, and minced garlic.
  3. Mix the Filling: Return peppers and onions to the pan. Stir in cream cheese or shredded cheddar if using, until melted and combined.
  4. Make Cheese Wraps: Bake cheese slices on parchment at 375°F for 5–6 minutes until edges are golden and they’re flexible.
  5. Assemble: Spoon the beef mixture onto each cheese slice and roll them up while warm. Serve immediately.
