Description

This keto cheeseburger casserole is a low-carb twist on a comfort food favorite. Packed with seasoned ground beef, melty cheese, and burger-inspired flavor, it’s an easy weeknight dinner that’s hearty, cheesy, and 100% keto-friendly—no bun required!


Ingredients

  • 2 lbs ground beef
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp minced garlic
  • ¼ cup mayonnaise
  • ¼ cup unsweetened ketchup
  • 1 tbsp mustard
  • 1½ cups shredded sharp cheddar cheese, divided
  • Olive oil spray (for greasing)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 2-quart baking dish with olive oil spray.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add ground beef, salt, pepper, and garlic. Cook until beef is browned and cooked through. Drain excess grease if needed.
  4. Reduce heat to low. Stir in mayonnaise, ketchup, mustard, and 1 cup of shredded cheese. Mix until cheese is melted and mixture is creamy.
  5. Transfer beef mixture to prepared baking dish. Top with remaining ½ cup shredded cheese.
  6. Bake uncovered for 15 minutes, or until cheese is bubbly and golden.
  7. Let rest for 5 minutes before serving.

Notes

  • Add chopped dill pickles, or tomatoes for extra burger flavor.

  • Pepper jack cheese or smoked paprika adds a spicy twist.

  • Stir in riced cauliflower or spinach for added veggies.

  • Swap beef with ground turkey for a lighter variation.
