Description
This keto cheeseburger casserole is a low-carb twist on a comfort food favorite. Packed with seasoned ground beef, melty cheese, and burger-inspired flavor, it’s an easy weeknight dinner that’s hearty, cheesy, and 100% keto-friendly—no bun required!
Ingredients
- 2 lbs ground beef
- 1 medium onion, finely chopped
- 2 tbsp olive oil
- 2 tsp kosher salt
- ¼ tsp black pepper
- 1 tbsp minced garlic
- ¼ cup mayonnaise
- ¼ cup unsweetened ketchup
- 1 tbsp mustard
- 1½ cups shredded sharp cheddar cheese, divided
- Olive oil spray (for greasing)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 2-quart baking dish with olive oil spray.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add ground beef, salt, pepper, and garlic. Cook until beef is browned and cooked through. Drain excess grease if needed.
- Reduce heat to low. Stir in mayonnaise, ketchup, mustard, and 1 cup of shredded cheese. Mix until cheese is melted and mixture is creamy.
- Transfer beef mixture to prepared baking dish. Top with remaining ½ cup shredded cheese.
- Bake uncovered for 15 minutes, or until cheese is bubbly and golden.
- Let rest for 5 minutes before serving.
