Description

This Honey Lime Chicken & Avocado Rice Stack features tender, honey-glazed chicken breast paired with creamy avocado and zesty coriander lime rice. It’s a visually stunning dish with restaurant-style presentation that is simple to prepare at home, perfect for an elegant yet easy dinner.

Ingredients

For the Chicken:

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Oil for cooking

For the Rice:

  • 1 cup cooked white or brown rice
  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • Salt to taste

For the Avocado:

  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Season the Chicken: Season the chicken breasts evenly on both sides with salt and pepper to enhance flavor and prepare for cooking.
  2. Prepare the Glaze: In a small bowl, whisk together honey, fresh lime juice, lime zest, and minced garlic to create the flavorful honey lime glaze.
  3. Cook the Chicken: Heat oil in a large frying pan over medium-high heat. Cook chicken breasts for 6-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 71°C (165°F).
  4. Glaze the Chicken: In the last 2 minutes of cooking, brush the honey lime glaze over the chicken allowing it to caramelize slightly, then remove from heat and let the chicken rest for 5 minutes before slicing.
  5. Prepare the Rice: In a bowl, combine cooked rice with chopped coriander, lime juice, and salt. Mix thoroughly to infuse flavors.
  6. Prepare the Avocado: Slice the ripe avocados and gently toss with lime juice, salt, and pepper to prevent browning and add zest.
  7. Assemble the Stack: Using a ring mould or a large cookie cutter, press the rice mixture into the bottom of the mould placed on a serving plate as the base layer.
  8. Add Avocado Layer: Layer the sliced avocado on top of the rice, slightly overlapping for visual appeal.
  9. Add Chicken Layer: Top the avocado layer with the sliced honey lime chicken, arranging the slices attractively.
  10. Finish and Serve: Carefully remove the mould and drizzle any remaining honey lime glaze around the plate for added presentation. Repeat steps for remaining servings and serve immediately.

Notes

  • Pound chicken breasts to an even thickness for uniform cooking.
  • Use a meat thermometer to ensure chicken reaches 71°C (165°F) for safety.
  • Allow chicken to rest for 5 minutes before slicing to retain juices.
  • Choose ripe avocados that yield gently when pressed for best texture.
  • A ring mould or an empty tuna tin with ends removed works well for stacking.
  • Assemble the dish fresh just before serving for optimal presentation.
  • Save any extra glaze to drizzle around the plate for enhanced flavor and appearance.
  • Try substituting brown rice for more fiber or quinoa as an alternative base.
  • Prepare components ahead of time and store separately; assemble just before serving.
