Ingredients
For the Chicken:
- 1 lb boneless skinless chicken breasts
- ¼ cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced

For the Rice:
- 1 cup cooked white or brown rice
- ¼ cup fresh coriander, chopped
- 1 tablespoon lime juice

- 2 ripe avocados, sliced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Season the Chicken: Season the chicken breasts evenly on both sides with salt and pepper to enhance flavor and prepare for cooking.
- Prepare the Glaze: In a small bowl, whisk together honey, fresh lime juice, lime zest, and minced garlic to create the flavorful honey lime glaze.
- Cook the Chicken: Heat oil in a large frying pan over medium-high heat. Cook chicken breasts for 6-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 71°C (165°F).
- Glaze the Chicken: In the last 2 minutes of cooking, brush the honey lime glaze over the chicken allowing it to caramelize slightly, then remove from heat and let the chicken rest for 5 minutes before slicing.
- Prepare the Rice: In a bowl, combine cooked rice with chopped coriander, lime juice, and salt. Mix thoroughly to infuse flavors.
- Prepare the Avocado: Slice the ripe avocados and gently toss with lime juice, salt, and pepper to prevent browning and add zest.
- Assemble the Stack: Using a ring mould or a large cookie cutter, press the rice mixture into the bottom of the mould placed on a serving plate as the base layer.
- Add Avocado Layer: Layer the sliced avocado on top of the rice, slightly overlapping for visual appeal.
- Add Chicken Layer: Top the avocado layer with the sliced honey lime chicken, arranging the slices attractively.
- Finish and Serve: Carefully remove the mould and drizzle any remaining honey lime glaze around the plate for added presentation. Repeat steps for remaining servings and serve immediately.
