Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- Salt and pepper to taste
- 2 tbsp olive oil or vegetable oil
- 4 cloves garlic, minced
- 1/3 cup honey
- 1/4 cup soy sauce
- 1 tbsp apple cider vinegar or rice vinegar
- 1/4 cup water
- 1 tbsp cornstarch (for slurry)
- 1 cup long grain white rice
- 2 cups chicken broth
- 1/2 cup milk or heavy cream
- 2 tbsp butter
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Toss chicken pieces in cornstarch, salt, and pepper until evenly coated.
- Heat oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, about 6–8 minutes. Set aside.
- In the same skillet, sauté minced garlic until fragrant.
- Add honey, soy sauce, vinegar, and water. Simmer briefly, then stir in cornstarch slurry to thicken the sauce.
- Return chicken to the skillet, toss to coat evenly in the sauce, and cook until glossy.
- Cook rice in chicken broth with salt and garlic powder until tender.
- Stir butter, milk or cream, and Parmesan into the rice until creamy and smooth.
- Serve chicken bites over the creamy rice, spooning extra sauce on top.
