Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • 2 tbsp olive oil or vegetable oil
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1 tbsp apple cider vinegar or rice vinegar
  • 1/4 cup water
  • 1 tbsp cornstarch (for slurry)
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/2 cup milk or heavy cream
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Toss chicken pieces in cornstarch, salt, and pepper until evenly coated.
  2. Heat oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, about 6–8 minutes. Set aside.
  3. In the same skillet, sauté minced garlic until fragrant.
  4. Add honey, soy sauce, vinegar, and water. Simmer briefly, then stir in cornstarch slurry to thicken the sauce.
  5. Return chicken to the skillet, toss to coat evenly in the sauce, and cook until glossy.
  6. Cook rice in chicken broth with salt and garlic powder until tender.
  7. Stir butter, milk or cream, and Parmesan into the rice until creamy and smooth.
  8. Serve chicken bites over the creamy rice, spooning extra sauce on top.
