Ingredients
Egg Mixture
- 6 large egg yolks
- ½ cup granulated sugar
Spiced Milk
- 2 cups milk
- ¼ teaspoon ground nutmeg
- pinch ground cinnamon
Finishing Ingredients
- 1 cup heavy cream
- 2 teaspoons vanilla extract
Instructions
- Mix Egg Yolks and Sugar: Add the egg yolks to the bowl of a stand mixer. Mix on medium speed while slowly adding the sugar. Increase speed to high and continue mixing until the mixture is pale, light, and fluffy.
- Heat Milk and Spices: In a medium saucepan, bring the milk, ground nutmeg, and cinnamon to a simmer over medium-high heat, allowing the spices to infuse the milk gently.
- Temper the Eggs: Slowly ladle the warm spiced milk into the egg yolk mixture while whisking constantly to avoid curdling. Once combined, return the entire mixture to the saucepan.
- Cook the Mixture: Cook over medium heat, stirring continuously, until the mixture thickens enough to coat the back of a spoon. This ensures the eggnog is creamy and safe to consume.
- Add Cream and Vanilla: Remove from heat and stir in the heavy cream and vanilla extract to enrich the texture and add depth of flavor.
- Strain and Chill: Pour the eggnog through a fine-mesh strainer into a clean bowl to remove any cooked egg bits. Cover and refrigerate until completely chilled, about 1 hour.
