Ingredients

Egg Mixture

  • 6 large egg yolks
  • ½ cup granulated sugar

Spiced Milk

  • 2 cups milk
  • ¼ teaspoon ground nutmeg
  • pinch ground cinnamon

Finishing Ingredients

  • 1 cup heavy cream
  • 2 teaspoons vanilla extract


Instructions

  1. Mix Egg Yolks and Sugar: Add the egg yolks to the bowl of a stand mixer. Mix on medium speed while slowly adding the sugar. Increase speed to high and continue mixing until the mixture is pale, light, and fluffy.
  2. Heat Milk and Spices: In a medium saucepan, bring the milk, ground nutmeg, and cinnamon to a simmer over medium-high heat, allowing the spices to infuse the milk gently.
  3. Temper the Eggs: Slowly ladle the warm spiced milk into the egg yolk mixture while whisking constantly to avoid curdling. Once combined, return the entire mixture to the saucepan.
  4. Cook the Mixture: Cook over medium heat, stirring continuously, until the mixture thickens enough to coat the back of a spoon. This ensures the eggnog is creamy and safe to consume.
