Ingredients
Sausage
- 1 lb breakfast sausage (cooked and cooled)
Batter
- 2 cups protein pancake mix (such as Kodiak Cakes)
- 1.5 cups water
- 1/4 cup sugar-free maple syrup
- 1 cup shredded cheddar cheese (sharp cheddar preferred)
Instructions
- Preheat the oven: Preheat your oven to 400°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or butter to prevent sticking.
- Prepare the pancake batter: In a large mixing bowl, combine the protein pancake mix with water according to the package instructions (for Kodiak Cakes, mix until smooth).
- Add cooked sausage: Fold the completely cooled cooked breakfast sausage into the pancake batter. Cooling the sausage first prevents the batter from becoming too warm.
- Mix in cheese and syrup: Gently fold in the shredded cheddar cheese and sugar-free maple syrup, mixing just until combined to avoid tough texture.
- Fill muffin cups: Spoon the batter into each muffin cup, filling about 3/4 full to allow room for rising without overflow.
- Bake: Place the muffin tin in the oven and bake for 18-23 minutes until the McGriddle bites are golden brown and a toothpick inserted in the center comes out clean.
- Cool and remove: Let the bites cool in the pan for 5 minutes before removing them to prevent falling apart.
Notes
- Ensure sausage is fully cooked and cooled before adding to batter to maintain proper batter temperature.
- Do not overmix the batter to keep bites tender and light.
- Use sharp cheddar cheese for a more pronounced flavor.
- Try sugar-free maple syrup to keep sugar content low while maintaining sweetness.
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
