Description

These High Protein McGriddle Bites are a delicious and convenient breakfast option, combining savory cooked breakfast sausage, protein-packed pancake mix, sharp cheddar cheese, and sugar-free maple syrup into bite-sized muffins. Perfectly baked to golden brown, they offer a flavorful and satisfying way to start your day with extra protein and balanced flavors.

Ingredients

Sausage

  • 1 lb breakfast sausage (cooked and cooled)

Batter

  • 2 cups protein pancake mix (such as Kodiak Cakes)
  • 1.5 cups water
  • 1/4 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or butter to prevent sticking.
  2. Prepare the pancake batter: In a large mixing bowl, combine the protein pancake mix with water according to the package instructions (for Kodiak Cakes, mix until smooth).
  3. Add cooked sausage: Fold the completely cooled cooked breakfast sausage into the pancake batter. Cooling the sausage first prevents the batter from becoming too warm.
  4. Mix in cheese and syrup: Gently fold in the shredded cheddar cheese and sugar-free maple syrup, mixing just until combined to avoid tough texture.
  5. Fill muffin cups: Spoon the batter into each muffin cup, filling about 3/4 full to allow room for rising without overflow.
  6. Bake: Place the muffin tin in the oven and bake for 18-23 minutes until the McGriddle bites are golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and remove: Let the bites cool in the pan for 5 minutes before removing them to prevent falling apart.

Notes

  • Ensure sausage is fully cooked and cooled before adding to batter to maintain proper batter temperature.
  • Do not overmix the batter to keep bites tender and light.
  • Use sharp cheddar cheese for a more pronounced flavor.
  • Try sugar-free maple syrup to keep sugar content low while maintaining sweetness.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
