Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups green cabbage, shredded
  • 2 large carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 6 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Remove excess fat if necessary.
  2. Add diced onion and garlic; sauté until softened, about 2-3 minutes.
  3. Stir in the cabbage, carrots, and celery. Cook for another 5 minutes until vegetables start to soften.
  4. Pour in beef broth and diced tomatoes (with juice). Add thyme, smoked paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes, or until vegetables are tender.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
