Description

Hawaiian Huli Huli Chicken is a grilled chicken dish marinated in a sweet and savory tropical sauce, delivering juicy meat with smoky, caramelized flavors.


Ingredients

  • 23 lbs chicken thighs (bone-in, skin-on or boneless, skinless)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 green onions, chopped (for garnish)
  • 4 pineapple slices (optional, for grilling)

Instructions

  1. Whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, and sesame oil in a bowl.
  2. Place chicken in a zip-top bag or shallow dish and pour marinade over it. Marinate in the fridge for at least 4 hours or overnight.
  3. Preheat grill to medium heat and oil the grates lightly.
  4. Remove chicken from marinade, reserving some for basting, and place on the grill.
  5. Grill for 6-7 minutes per side, turning frequently and basting with reserved marinade until nicely glazed.
  6. Grill pineapple slices alongside chicken if using.
  7. Remove chicken from grill, let rest for a few minutes, garnish with green onions, and serve.
