Description
Hawaiian Huli Huli Chicken is a grilled chicken dish marinated in a sweet and savory tropical sauce, delivering juicy meat with smoky, caramelized flavors.
Ingredients
- 2–3 lbs chicken thighs (bone-in, skin-on or boneless, skinless)
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 1 tablespoon sesame oil
- 2 green onions, chopped (for garnish)
- 4 pineapple slices (optional, for grilling)
Instructions
- Whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, and sesame oil in a bowl.
- Place chicken in a zip-top bag or shallow dish and pour marinade over it. Marinate in the fridge for at least 4 hours or overnight.
- Preheat grill to medium heat and oil the grates lightly.
- Remove chicken from marinade, reserving some for basting, and place on the grill.
- Grill for 6-7 minutes per side, turning frequently and basting with reserved marinade until nicely glazed.
- Grill pineapple slices alongside chicken if using.
- Remove chicken from grill, let rest for a few minutes, garnish with green onions, and serve.
Notes
- Marinate overnight for the best flavor.
- Use canned pineapple juice if fresh is unavailable.
- Can be baked in the oven and broiled for caramelization.
- Perfectly pairs with rice, grilled pineapple, or macaroni salad.
