Ingredients
- 1 pound ground beef
- 2 medium zucchinis, diced
- 1 large sweet potato, peeled and cubed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant and softened.
- Add ground beef, breaking it apart with a spoon as it cooks. Brown for 5-7 minutes until no longer pink; drain excess grease if necessary.
- Stir in sweet potato cubes. Season with smoked paprika, oregano, salt, and black pepper. Cover and cook for about 10 minutes, stirring occasionally, until sweet potatoes are tender.
- Add diced zucchini and cook uncovered for an additional 5 minutes until slightly softened but still crisp.
- Remove from heat and garnish with fresh parsley before serving warm.
