Description
Grilled Bruschetta Chicken is a delightful fusion of juicy grilled chicken breasts, melted mozzarella cheese, and a fresh tomato-basil topping. It’s a perfect dish for summer evenings, combining the smoky flavors of the grill with the freshness of a classic bruschetta.
Ingredients
- 4 boneless skinless chicken breasts, pounded to even thickness (1 inch or less)
- 2 tablespoons oil
- 1 teaspoon Italian seasoning (or ¼ teaspoon each dried basil, dried oregano, and dried thyme)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 4 slices mozzarella cheese
Tomato Basil Topping
- 3 roma tomatoes, diced
- Salt and pepper to taste
- 2 teaspoons fresh lemon juice
- 2 tablespoons finely chopped fresh basil
Instructions
- Combine the chicken breasts with oil, Italian seasoning, garlic powder, salt, and black pepper in a large bowl. Make sure each piece is evenly coated with the seasonings.
- Preheat the grill to medium-high heat and cook the chicken for 6-8 minutes on each side, or until thoroughly cooked.
- While the chicken is grilling, prepare the topping by mixing diced roma tomatoes with salt, pepper, lemon juice, and chopped basil in a medium bowl.
- Once the chicken is cooked, place a slice of mozzarella cheese on each breast and let it melt for about a minute on the grill.
- Top each piece of chicken with the tomato basil mixture and serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the tomato basil topping.
- Fresh mozzarella can be used instead of sliced mozzarella for a creamier texture.
- Drizzle a balsamic glaze over the finished dish for added sweetness and depth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1-2 minutes.
