Marinade and Chicken
- 1 lemon, juiced and zested

- 1 pound thin-sliced chicken breast

Instructions
- Make Marinade and Marinate: In a large mixing bowl, combine the lemon zest and juice, olive oil, garlic, dried oregano, smoked paprika, sea salt, and black pepper. Mix well until emulsified. Set aside ¼ cup of the marinade for later use. Add the chicken breasts to the remaining marinade, tossing with tongs to coat evenly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow flavors to infuse.
- Cook Chicken: Heat a nonstick skillet over medium-high heat. Once hot, drizzle in some olive oil and place the marinated chicken breasts in the pan. Sear each side until nicely golden brown, about 3-4 minutes per side or until the chicken is cooked through, white in the center, and juices run clear when cut.
- Finish and Serve: Transfer the cooked chicken to a serving plate. Drizzle the reserved marinade over the top, then sprinkle generously with fresh chopped parsley and crumbled feta cheese. Serve immediately with additional lemon wedges on the side for extra brightness.
