Ingredients
- 4 egg whites (room temperature)
- ½ cup vegetable oil
- 1½ cups grape soda (e.g., Grape Crush)
- 15.25 oz white cake mix
- 0.14 oz packet unsweetened grape-flavored drink mix (e.g., Kool-Aid)
- 4–6 drops purple gel food coloring
- 1 cup (2 sticks) salted butter, softened
- 2 teaspoons pure vanilla extract
- ¼ teaspoon pure almond extract
- 4 cups powdered sugar, sifted
- 2–3 tablespoons heavy cream
- 4–6 drops purple gel food coloring (for frosting)
- Purple sparkling sugar (optional garnish)
Instructions
- Preheat the oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.
- In a medium bowl, mix egg whites, vegetable oil, and grape soda on medium-low speed until combined. Add the cake mix and grape drink mix gradually, then stir in purple food coloring until evenly distributed.
- Spoon the batter into cupcake liners, filling each about two-thirds full.
- Bake for 15 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
- To make the frosting, beat the butter, vanilla, and almond extract on medium-high until fluffy. Add powdered sugar one cup at a time, alternating with heavy cream until smooth. Mix in food coloring to reach desired shade.
- Pipe the frosting onto cooled cupcakes using a star tip and garnish with sparkling sugar if desired.
