Description

Ingredients

  • 4 egg whites (room temperature)
  • ½ cup vegetable oil
  • 1½ cups grape soda (e.g., Grape Crush)
  • 15.25 oz white cake mix
  • 0.14 oz packet unsweetened grape-flavored drink mix (e.g., Kool-Aid)
  • 46 drops purple gel food coloring
  • 1 cup (2 sticks) salted butter, softened
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon pure almond extract
  • 4 cups powdered sugar, sifted
  • 23 tablespoons heavy cream
  • 46 drops purple gel food coloring (for frosting)
  • Purple sparkling sugar (optional garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.
  2. In a medium bowl, mix egg whites, vegetable oil, and grape soda on medium-low speed until combined. Add the cake mix and grape drink mix gradually, then stir in purple food coloring until evenly distributed.
  3. Spoon the batter into cupcake liners, filling each about two-thirds full.
  4. Bake for 15 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
  5. To make the frosting, beat the butter, vanilla, and almond extract on medium-high until fluffy. Add powdered sugar one cup at a time, alternating with heavy cream until smooth. Mix in food coloring to reach desired shade.
  6. Pipe the frosting onto cooled cupcakes using a star tip and garnish with sparkling sugar if desired.
