Ingredients
- 2 cups bread flour (or all-purpose)
- 1 teaspoon kosher salt
- 1/2 teaspoon granulated sugar
- 1 1/8 teaspoons instant yeast
- 1 cup warm water
- Olive oil (for dough and pan)
- 3 cloves garlic, minced
- 2/3 cup freshly grated Parmesan cheese
- 1 1/2 teaspoons Italian seasoning (optional)
- Maldon or flaked sea salt for topping
Instructions
- In a large bowl, whisk together flour, salt, sugar, and yeast.
- Mix in warm water until a dough forms.
- Cover the bowl with plastic wrap and refrigerate for 8 hours or overnight.
- Drizzle oil in an 8″ round pan and place the dough inside, tucking the edges under.
- Cover and let rise for 2 hours until dough puffs and fills the pan.
- Preheat oven to 450°F. Press dimples in the dough, drizzle with more olive oil, and sprinkle garlic, Parmesan, and Italian seasoning on top.
- Reduce oven temperature to 425°F and bake for 22–24 minutes until golden.
- Let cool slightly, then slice and serve warm.
Notes
- Use bread flour for best texture, but all-purpose flour also works well.
- For a stronger garlic flavor, use fresh minced garlic in the topping.
- Can be stored at room temperature for 4–5 days, wrapped.
- To reheat, microwave under a damp towel or use a toaster oven.
- Focaccia can be frozen and reheated directly from the freezer.
