Description

Garlic Parmesan Chicken and Potatoes is a one-pan meal loaded with flavor and simplicity. Juicy chicken and crispy roasted potatoes are tossed in a savory garlic-parmesan seasoning and baked to golden perfection. This easy, comforting dish is perfect for busy weeknights or cozy family dinners—minimal prep, maximum flavor!

Ingredients

  • Chicken thighs or breasts (boneless or bone-in)
  • Baby potatoes (halved or quartered)
  • Olive oil
  • Garlic (minced)
  • Grated Parmesan cheese
  • Italian seasoning
  • Paprika
  • Salt
  • Black pepper
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken and potatoes with olive oil, minced garlic, Parmesan, Italian seasoning, paprika, salt, and pepper until fully coated.
  3. Spread mixture onto a large baking sheet or casserole dish in a single layer. Place chicken skin-side up if using bone-in pieces.
  4. Bake uncovered for 35–45 minutes, or until chicken reaches an internal temp of 165°F (75°C) and potatoes are golden and tender.
  5. For a crisp finish, broil for 2–3 minutes at the end.
  6. Garnish with chopped parsley and serve warm.

Notes

  • d broccoli or green beans in the last 15–20 minutes for a veggie-packed pan.
  • Use sweet potatoes instead of regular for a different twist.
  • Swap Italian seasoning for Cajun or ranch seasoning for variation.
  • Use mozzarella or mixed cheeses for an extra cheesy version.
  • Make ahead by prepping and freezing raw, seasoned ingredients to bake later.
