Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce is a rich and comforting one-pan meal featuring seared salmon fillets, sautéed mushrooms, wilted spinach, and a luscious garlic cream sauce.
Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup mushrooms, sliced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the salmon fillets skin-side down for 4-5 minutes, flip, and cook another 2-3 minutes. Remove and set aside.
- In the same pan, melt butter and sauté minced garlic until fragrant.
- Add sliced mushrooms and cook until golden brown and tender.
- Add spinach and cook until wilted.
- Pour in heavy cream, stir in Parmesan, and season with salt, pepper, and Italian seasoning. Simmer until slightly thickened.
- Return salmon fillets to the pan, spoon sauce over them, and simmer for 1-2 more minutes.
- Optional: Add a squeeze of lemon juice before serving.
Notes
- Swap spinach with kale or Swiss chard for variation.
- Use coconut cream and omit Parmesan for a dairy-free version.
- Sun-dried tomatoes or red pepper flakes add extra flavor.
- Trout or cod can be used as alternatives to salmon.
