Description

Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce is a rich and comforting one-pan meal featuring seared salmon fillets, sautéed mushrooms, wilted spinach, and a luscious garlic cream sauce.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the salmon fillets skin-side down for 4-5 minutes, flip, and cook another 2-3 minutes. Remove and set aside.
  2. In the same pan, melt butter and sauté minced garlic until fragrant.
  3. Add sliced mushrooms and cook until golden brown and tender.
  4. Add spinach and cook until wilted.
  5. Pour in heavy cream, stir in Parmesan, and season with salt, pepper, and Italian seasoning. Simmer until slightly thickened.
  6. Return salmon fillets to the pan, spoon sauce over them, and simmer for 1-2 more minutes.
  7. Optional: Add a squeeze of lemon juice before serving.

Notes

  • Swap spinach with kale or Swiss chard for variation.
  • Use coconut cream and omit Parmesan for a dairy-free version.
  • Sun-dried tomatoes or red pepper flakes add extra flavor.
  • Trout or cod can be used as alternatives to salmon.
