Description

Fresh vegetable tortilla roll-ups are a quick, creamy, and colorful vegetarian snack made with a blend of cheeses, crisp veggies, and soft tortillas—perfect for lunchboxes, parties, or a light meal.

Ingredients

  • 4 oz (½ block) cream cheese, softened
  • ⅓ cup mayonnaise
  • ½ tsp garlic powder
  • ¼ tsp dried dill
  • 1 T green onions, finely chopped
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  • ½ cup shredded cheddar cheese
  • 2 large flour tortillas

Instructions

  1. In a bowl, mix the softened cream cheese, mayonnaise, garlic powder, dill, green onions, salt, and pepper until smooth.
  2. Stir in the shredded cheddar cheese until evenly combined.
  3. Spread the mixture evenly over each tortilla, reaching the edges.
  4. Roll each tortilla tightly into a log and wrap in plastic wrap.
  5. Refrigerate for at least 1–2 hours to allow the flavors to meld.
  6. Just before serving, slice each roll into 8 bite-sized pinwheels.

Notes

  • Chill overnight for better flavor blending and firmness.
  • Use fresh herbs or different cheeses for variations.
  • Add finely chopped veggies for extra texture and nutrition.
  • Best served cold or at room temperature.
  • Store leftovers in plastic wrap for up to 4 days.
