Description

A simple yet incredibly flavorful tomato garlic salad bursting with fresh ingredients—juicy tomatoes, aromatic garlic, and zesty dressing—a quick, nutritious side for any meal.

Ingredients

  • Fresh tomatoes (cherry, grape, or heirloom)—chopped into bite‑sized pieces or wedges
  • Garlic, minced
  • Extra virgin olive oil
  • Red wine vinegar (or balsamic vinegar)
  • Fresh basil or parsley, chopped
  • Salt & black pepper
  • Red pepper flakes (optional, for spice)

Instructions

  1. Wash and chop the tomatoes into bite‑sized pieces or halves (or wedges if using heirloom varieties).
  2. In a small bowl, whisk together extra virgin olive oil, red wine vinegar (or balsamic), minced garlic, salt, and black pepper. If desired, add red pepper flakes for heat.
  3. In a large bowl, combine the chopped tomatoes, chopped basil or parsley, and red pepper flakes (if using).
  4. Pour the dressing over the tomato mixture and gently toss to coat evenly.
  5. Let the salad sit for 5–10 minutes to allow flavors to meld. Serve immediately or chill for a more intense taste.

Notes

  • Use ripe, in‑season tomatoes for best flavor—cherry and grape for sweetness, heirloom for depth.
  • Can substitute balsamic vinegar for a sweeter flavor or add a squeeze of lemon juice or a teaspoon of Dijon mustard for variation.
  • Add-ins: fresh mozzarella or feta cheese for creaminess; toasted pine nuts, walnuts, or croutons for crunch; grilled shrimp or shredded chicken for protein.
  • Store leftovers (without salt) in an airtight container in the fridge for up to 24 hours—add salt when serving to prevent excess liquid.
