Onion Mixture

  • 2 tablespoons salted butter (softened, plus more for the bread)

  • Water (as needed)

  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon sugar

Instructions

  1. Caramelize the Onions: Melt 2 tablespoons of butter in a large sauté pan over medium heat. Add thinly sliced onions and stir them gently. Cover the pan and cook until the onions soften, about 5 minutes. Add a splash of water to loosen browned bits from the pan bottom, then cover and cook further. Repeat adding water and cooking until the onions turn a deep brown and caramelize evenly.
  2. Season the Onions: Stir in fresh thyme, Worcestershire sauce, sugar, and sherry vinegar. Season with salt and pepper to taste. Continue cooking the mixture for 2 to 3 more minutes to meld flavors. Transfer the onions to a bowl and set aside.
  3. Assemble the Sandwiches: Spread a layer of the caramelized onion mixture evenly over each slice of bread. On two slices, place a folded slice of Swiss cheese, then add more onions, followed by another slice of cheese, more onions, and one last slice of cheese. Top with the remaining bread slices and gently press down to secure the filling.
  4. Cook the Sandwiches: Preheat a large sauté pan or griddle over medium-low heat. Butter one side of each sandwich and carefully place them butter-side-down on the pan. Cook until the bread is golden brown, about 4 minutes. Meanwhile, butter the top side of each sandwich. Flip the sandwiches carefully, cooking until the other side turns golden.
