Description

Fluffy Cottage Cheese Cloud Bread is a light, airy, and protein-rich bread alternative that’s low-carb, gluten-free, and perfect for healthy diets.


Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese (preferably full-fat)
  • ¼ tsp cream of tartar
  • 1 tbsp almond flour (optional)
  • 1 tbsp coconut flour (optional)
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil or melted butter
  • Optional: Sesame seeds, chia seeds, or poppy seeds
  • Optional: Fresh herbs like rosemary or thyme

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.
  2. Add cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
  3. In the bowl with the yolks, mix in cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth and well-combined.
  4. Gently fold the egg white mixture into the cottage cheese mixture using a spatula, maintaining the fluffiness and avoiding overmixing.
  5. Drop dollops of the mixture onto the prepared baking sheet, shaping into circles or ovals about ½ inch thick. Sprinkle with optional toppings.
  6. Bake for 25-30 minutes until the tops are golden and slightly firm. Cool completely on a wire rack.
  7. Serve as desired. Store leftovers in an airtight container in the fridge for up to 3 days.
