Ingredients
- 3 large eggs, separated
- ½ cup cottage cheese (preferably full-fat)
- ¼ tsp cream of tartar
- 1 tbsp almond flour (optional)
- 1 tbsp coconut flour (optional)
- ½ tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil or melted butter
- Optional: Sesame seeds, chia seeds, or poppy seeds
- Optional: Fresh herbs like rosemary or thyme
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.
- Add cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
- In the bowl with the yolks, mix in cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth and well-combined.
- Gently fold the egg white mixture into the cottage cheese mixture using a spatula, maintaining the fluffiness and avoiding overmixing.
- Drop dollops of the mixture onto the prepared baking sheet, shaping into circles or ovals about ½ inch thick. Sprinkle with optional toppings.
- Bake for 25-30 minutes until the tops are golden and slightly firm. Cool completely on a wire rack.
- Serve as desired. Store leftovers in an airtight container in the fridge for up to 3 days.
