Ingredients
1 lb penne pasta
1/2 cup feta cheese, crumbled
1/2 cup dried cranberries
1/2 cup red onion, thinly sliced
1/4 cup olive oil
1/4 cup fresh orange juice
2 tbsp white wine vinegar
1 tsp honey
Salt and pepper, to taste
Instructions
Cook the penne pasta according to package directions. Drain and rinse with cold water to cool.
In a large bowl, combine the cooked penne, crumbled feta, dried cranberries, and red onion. Set aside.
For the vinaigrette, whisk together olive oil, fresh orange juice, white wine vinegar, honey, salt, and pepper in a small bowl until well combined.
Pour the vinaigrette over the pasta mixture and toss gently to coat evenly.
Serve immediately or refrigerate for 1 hour to allow flavors to meld.
